Friday Favorites: Valentine’s Day

Valentine’s Day is a divisive occasion, but whether you love it or hate it, it’s a week away. I, for one, think any excuse to show people you love them is a good one, and you won’t be surprised to learn that I express love primarily through food (and videos of dogs on Instagram).

Red Velvet Cheesecake Thumbprints

Red Velvet Cheesecake ThumbprintsIt’s a tradition of mine to make a red velvet treat for Oscar Night, which happens to be this Sunday. It’s sort of my “thing.” Red Velvet Cheesecake ThumbprintsYes, I know the Oscars are silly, but I, too, am silly. Also, I love a theme, especially when it means I get to watch 15 or 20 movies, cheer/curse/cry at my TV and eat red velvet baked goods. There was once a whole meal I made only for this occasion, but over the years it’s been reduced down to a “red velvet something.” This is what restraint looks like for me.

As far as the red velvet something goes, it could be the classic cake or cookies or a cookie cake—it’s just got to have that perfect mix of chocolate and vanilla flavors, preferably have a cream cheese element, and be an astonishing shade of crimson. Or, as I like to explain it, it has to be red like the red carpet.Red Velvet Cheesecake ThumbprintsThis year’s treat? Red Velvet Cheesecake Thumbprints. They’re exactly what they sound like—red velvet cookies with little wells of cheesecake baked into their centers—and they are also as delicious as you’d expect. Chocolate, vanilla and tangy cheesecake are a match made in heaven. And also my kitchen. And soon, yours.Red Velvet Cheesecake ThumbprintsThe base for these cookies is a slight variation on my Red Velvet Cut-Out Cookie dough; as with my sugar cookie-based thumbprints, the “variation” is a reduction of baking powder. The dough is mixed ahead of time and chilled before being scooped, formed into balls, and rolled in sugar for both texture and sparkle.

I mean, I guess you could skip the roll in sugar if you want, but you’d be missing out on a crisp sugar crust/sugar cookie/squidgy cheesecake textural experience *and* sparkle. Sparkle is very important on Oscar Night.Red Velvet Cheesecake ThumbprintsNext come the thumbprints or, if you want to keep things transparent, spoon-prints. Each sugar-crusted dough ball is indented with the back of a rounded 1/2 teaspoon measure. You could, of course, do this with your thumb, but a spoon is a more accurate (and less messy) tool for the job.Red Velvet Cheesecake ThumbprintsThe cookies are baked at a fairly low temperature (300F for ten minutes) before the thumbprints are deepened and widened with the back of a 1 teaspoon measure. Oh, and filled with cheesecake ♥️Red Velvet Cheesecake ThumbprintsAfter ten more minutes in the oven, the cookies will be set and the cheesecake will be a little puffy. Let them cool to room temperature—the centers will deflate a bit—before chilling for at least 45 minutes. You want those little wells of cheesecake to be nice and cold when you’re snacking on them mid-Oscar broadcast.Red Velvet Cheesecake ThumbprintsIf you don’t have traditions and superstitions (and an entire friendship) based around an awards show, you can make these Red Velvet Cheesecake Thumbprints for Valentine’s Day. Red Velvet Cheesecake Thumbprints
makes 3.5 dozen cookies

Cookie Dough:
2 3/4 cups all-purpose flour
1/2 cup natural unsweetened cocoa powder (not Dutch process)
1 teaspoon baking powder
1/2 teaspoon Kosher or sea salt
1/2 cup unsalted butter, softened to room temperature
4 ounces (1/2 brick) full-fat brick-style cream cheese, softened to room temperature
1 cup granulated sugar
1 large egg + 1 large egg yolk, room temperature
1 1/2 teaspoons white vinegar (or apple cider vinegar)
2 teaspoons pure vanilla extract
1 teaspoon red gel food coloring

Cheesecake Filling:
4 ounces (1/2 brick) full-fat brick-style cream cheese, softened to room temperature
2 tablespoons granulated sugar
1 large egg yolk, room temperature
1/2 teaspoon pure vanilla extract

For Rolling:
1/4 cup granulated sugar

In a large mixing bowl, whisk together flour, cocoa powder, baking powder, and salt. Set aside.

In a separate large mixing bowl, use an electric mixer to beat butter and cream cheese until light and fluffy, about 2 minutes. Cream in granulated sugar, followed by the egg, egg yolk, vinegar, vanilla extract, and gel food coloring. Add dry ingredients in 3 installments, combining completely after each. Divide dough into quarters and wrap each in plastic wrap. Chill for at least 3 hours, or up to 3 days.

Preheat oven to 300F. Line two baking sheets with parchment.

Make the cheesecake filling. In a small mixing bowl, use an electric mixer to beat cream cheese until fluffy. Mix in sugar, followed by egg yolk and vanilla. Transfer to a piping bag (or ziptop sandwich bag). Set aside.

Place rolling sugar in a small bowl.

Scoop cookie dough by the tablespoon and roll into balls. Roll each ball in sugar and place at least 2 inches apart on prepared baking sheets. Use the back of a rounded 1/2 teaspoon to slowly press a well into each dough ball. They may crack a bit—just carefully press/pinch big cracks back together with your fingers.

Bake cookies 10 minutes. Remove the cookies from the oven, then carefully press the back of a rounded 1 teaspoon measuring spoon into the centers again. Pipe cheesecake filling into each well. Carefully tap the pan on the counter a couple of times to release large air bubbles. Bake cookies another 10 minutes, until cheesecake is set and a bit puffed.

Let cookies cool on the pans for 10 minutes before carefully removing to a rack to cool completely. Cheesecake will deflate a bit. Repeat rolling and baking process with all remaining dough, letting the cookie sheets come back to room temperature between batches.

Meyer Lemon Sweet Rolls

Meyer Lemon Sweet RollsToday is alllll about meyer lemons, y’all! As far as I’m concerned, they’re the queen of winter citrus. If you’ve never tried them, they’re what happens when you cross a mandarin orange with a lemon. This goes without saying, but they’re very, very good in baked goods.

The first is in the filling, which is simply a paste made of meyer lemon zest, sugar, salt and melted butter. I got the idea for painting on a glaze from last year’s Meyer Lemon Drizzle Cakes and I regret nothing. This simple syrup is made of meyer lemon juice and a few tablespoons of sugar, and brushed onto the rolls right after they come out of the oven. Ohhhh, the icing. It’s the crowning glory of this whole operation! Meyer Lemon Sweet Rolls
makes 12 rolls

Dough:
2 2/3-3 cups all-purpose flour
3 tablespoons granulated sugar
1 packet (2 1/4 teaspoons) instant yeast (I use Fleischmann’s Rapid Rise Yeast)
1 teaspoon Kosher or sea salt
1 cup whole milk
4 tablespoons unsalted butter
2 large eggs, beaten, room temperature

Filling:
2 tablespoons meyer lemon zest (about 2-3 meyer lemons)
2/3 cup granulated sugar
pinch of Kosher or sea salt
4 tablespoons unsalted butter, melted

Glaze:
1/4 cup fresh meyer lemon juice (1-2 meyer lemons)
3 tablespoons granulated sugar

Icing:
1 cup confectioners sugar
pinch of Kosher or sea salt
2-3 tablespoons fresh meyer lemon juice (1-1 1/2 meyer lemons)

Grease a 9×13-inch casserole dish or rimmed baking pan. Set aside.

In a large mixing bowl, whisk together 2 2/3 cups all-purpose flour, sugar, instant yeast, and salt. Set aside.

In a small saucepan, heat whole milk and butter until hot to the touch, about 110F.

Use a silicone spatula or wooden spoon to fold milk mixture into dry ingredients , followed by beaten eggs. Add more all-purpose flour in 2 tablespoon increments until dough starts to pull away from the sides of the bowl. Knead 5-6 minutes before forming into a ball. Cover with plastic wrap and let rest for 10 minutes (you may do this in a bowl, but I just do this on my surface).

Make the filling. In a small mixing bowl, use your fingertips to rub meyer lemon zest into sugar. Add salt and melted butter and stir with a fork until a paste forms.

On a lightly floured surface, roll dough into a 12×18-inch rectangle. Drop filling over the dough by the spoonful. Use an offset knife or the back of a spoon to spread filling mixture over the dough, keeping a 1/2-inch perimeter on all sides. Starting with the long edge closest to your body, tightly roll filled dough away from you, smoothing any seams with your thumbs. Slice dough into 12 rolls. Place rolls close together in prepared pan. Cover the pan with aluminum foil or plastic wrap. Place covered pan in a warm, draft-free place for 60-90 minutes, until rolls have doubled in size. Remove pan from oven.

Preheat oven to 375F. Uncover rolls. Bake 25-30 minutes (mine took 27), tenting the rolls with foil if anything begins to brown too quickly.

While rolls are baking, make the glaze. In a small bowl, use a fork to stir together meyer lemon juice and sugar. Microwave in 15 second increments, stirring in between, until the sugar has dissolved (45-60 seconds total).

Remove rolls from the oven. Let cool 1-2 minutes, then use a pastry brush to paint glaze all over all exposed pastry. Use all glaze. Let sit 5 minutes while you make the icing.

Make the icing. In a small mixing bowl, whisk together confectioners sugar, salt and 2 tablespoons of meyer lemon juice. Add more juice by the teaspoon (up to 3 teaspoons) until icing is thick, but pourable.

Spoon/pour icing over the rolls and use an offset icing knife or the back of a spoon to spread icing over the rolls as desired. Serve.

Butternut Squash Chili

Butternut Squash Chili {Vegan}I am psyched for today’s recipe, y’all! This vegan Butternut Squash Chili is so good and good for you—perfect for the Super Bowl this weekend or any wintry night.Butternut Squash Chili {Vegan}Butternut Squash Chili {Vegan}It’s made with loads of good stuff. We’re talking the standard onion, garlic and red bell pepper, of course, but also a whole butternut squash (duh), meaty mushrooms, and pinto beans. YUM!Butternut Squash Chili {Vegan}I know that being Texan means I “shouldn’t” like beans in chili, but here I am, putting them in there. No regrets. I almost always go for pinto beans in chili because that’s what I like, but if black beans or red kidney beans are more your style, by all means, switch it up!Butternut Squash Chili {Vegan}Small amounts of cinnamon and cocoa powder set this chili apart from the rest. They add a little nuance to the standard seasoning combination of chili powder, cumin, dried oregano, and cayenne. Minced chipotles in adobo are stirred in before serving for a touch of smoky heat.Butternut Squash Chili {Vegan}Butternut Squash Chili requires a couple of long browning steps—you want maximum flavor from those onions and mushrooms—and a simmer, but comes together surprisingly quickly overall. The batch pictured clocked in at just under two hours, which gives you just enough time to whip up some Cornmeal Biscuits to go alongside!Butternut Squash Chili {Vegan}As with most soupy, stewy things, this is a meal that will get better with time. It’s delicious the day it’s made, but is particularly spectacular after a day or two in the refrigerator. Basically, if you want to eat this while you watch the Super Bowl, make if Friday, Saturday or Sunday. Love a make-ahead main!

As stated many times over the years, I’m not a fan of football, but this chili? That’s a “super bowl” I can get behind.Butternut Squash Chili {Vegan}

Butternut Squash Chili {Vegan}
makes about 6 servings

3 tablespoons olive oil
1 medium Spanish onion, diced small
2 red bell peppers, diced small
1-1 1/2 teaspoons Kosher or sea salt, or to taste
5-7 cloves garlic, minced
8 ounces white button mushrooms, 1/2-inch diced
1 3 lb. butternut squash, 1/2-inch pieces (8-ish cups)
1 tablespoon chili powder
1 tablespoon ground cumin
1 1/2 teaspoons dried oregano
1/8 teaspoon ground cinnamon
1/8 teaspoon cayenne pepper (optional)
1 teaspoon natural unsweetened cocoa powder
1 6-ounce can tomato paste
4 cups vegetable stock (I use seasoned vegetable Better than Bouillon)
2 15-ounce cans pinto beans, drained & rinsed
2 chipotles in adobo, minced

Garnish:
avocado
chopped cilantro
sliced scallions
grated cheese (vegan or dairy)
crispy tortilla strips
crushed tortilla chips

Heat a heavy-bottomed pot over medium heat. Add 1 tablespoon olive oil and swirl to coat. Add onion, red bell pepper and a pinch of salt, and sauté until very soft and gaining color (about 15-20 minutes). Stir in garlic and cook until fragrant, about a minute. Remove from pot and set aside.

Add remaining 2 tablespoons of olive oil to the pan and swirl to coat. Add mushrooms and sprinkle with 1/2 teaspoon of salt. Cook, stirring frequently, until browned (about 15-20 minutes). Don’t rush it!

Return onion mixture to the pan, along with butternut squash. Stir in chili powder, cumin, oregano, cinnamon, cayenne, cocoa and 1/2 teaspoon salt. Add tomato paste and cook, stirring constantly for about 5 minutes, just until it begins to caramelize (it will ever-so-slightly darken).

Add vegetable stock and bring to a boil. Reduce to a simmer and let cook 20-25 minutes, or until squash is cooked through and tender. Add pinto beans and minced chipotles in adobo and let simmer another 7-10 minutes. Remove from heat. Taste for salt and adjust to your preferences.

Divide chili among bowls and serve with desired garnishes.

Cheddar Scallion Cornmeal Waffles

Cheddar Scallion Cornmeal Waffles {Gluten-Free}When I posted that Cheesy Jalapeño Cornbread a couple weeks ago, I had a thought that I could give a similar treatment to my Cornmeal Waffles. That’s to say I didn’t plan on posting two cornmeal-based recipes so close together, but I couldn’t get that idea out of my head…and so, here we are.

With minimal changes to the source recipe (swapping all the vegan ingredients for eggs and dairy), a bit more liquid, a brick’s-worth of grated cheddar and some sliced scallions, I was able to take those sweet-leaning waffles in a decidedly savory direction.Cheddar Scallion Cornmeal Waffles {Gluten-Free}Cheddar Scallion Cornmeal Waffles {Gluten-Free}Cheddar Scallion Cornmeal Waffles {Gluten-Free}You know, one that involves stacking smoked salmon and avocado and sriracha and lacy fried eggs on top of Cheddar Scallion Cornmeal Waffles and calling it breakfast or lunch or brunch or whatever.Cheddar Scallion Cornmeal Waffles {Gluten-Free}Aren’t these pretty? I’ve found my other waffles a bit difficult to photograph, but these are so dynamic and colorful! Love those golden, cheesy wells and all the fun toppings.Cheddar Scallion Cornmeal Waffles {Gluten-Free}I am huge fan of all things onion, so scallions were a natural choice as a mix-in. Feel free to leave them out if they’re not your thing, or swap ‘em for chopped herbs or minced jalapeños or anything else your heart desires.

Like my other cornmeal-based recipes, Cheddar Scallion Cornmeal Waffles are naturally gluten-free. Also, they freeze & reheat like a dream, so you can stash them and then throw together a meal at the drop of a hat. Or eat them with your hands like a wild animal while writing a blog post. Cheddar Scallion Cornmeal Waffles {Gluten-Free}
makes 16-17 4-inch waffles

2 large eggs, room temperature
1 teaspoon dijon mustard
1 1/2 cup buttermilk, room temperature
2 cups yellow cornmeal
1/3 cup cornstarch
1/4 cup granulated sugar
1 teaspoon Kosher or sea salt
1 tablespoon baking powder
8 ounces sharp cheddar cheese, grated
1/4 cup thinly-sliced scallions (about 3 small scallions)
1/2 cup (1 stick) unsalted butter, melted & cooled slightly

For the waffle iron:
cooking spray

For serving:
smoked salmon
avocado
sriracha
soft-boiled, poached or fried eggs
thinly-sliced scallions

Preheat oven to 200F. Place a cooling rack over a rimmed baking sheet.

Heat waffle iron according to package directions.

In a small bowl, whisk eggs until pale. Add dijon, followed by buttermilk. Set aside.

In a medium mixing bowl, whisk together cornmeal, cornstarch, sugar, salt, and baking powder. Use a silicone spatula to fold in grated cheddar and scallions. Stir in melted butter, followed by egg/buttermilk mixture.

Grease waffle iron with cooking spray. Pour a 1/4 cup of the waffle batter into each well of the iron and close the top. Let cook until steam dissipates and the wells are turning golden, about 6-8 minutes.

Transfer cooked waffles to the prepared rack-over-pan and place in the oven to keep warm. Re-grease the waffle iron and cook remaining batter.

Serve waffles with lox, sour cream, eggs and/or scallions, if desired. Enjoy immediately.
