It’s been gloomy out lately, but I’m keeping it sunny in my kitchen with these classic Lemon Poppy Seed Muffins.
They’ve got loads of bright lemon flavor from fresh zest and juice, a little crunchy texture from poppy seeds, and they stay moist for days thanks to ingredients like eggs, oil and whole milk.
These muffins come together quickly and easily and don’t require a mixer. In fact, a mixer would be a detriment here. The secret to tender Lemon Poppy Seed Muffins (and most muffins and quick breads) is to mix them as little as possible. You can stir the wet and dry ingredients separately as much as you like, but once they’re in the same bowl, you want to stir just 15 or 20 times.
The batter is divided into 12 muffin cups before being baked at 400F for five minutes, and then 350F for fifteen more. That initial blast of heat helps them to dome, while the remaining bake time ensures they cook evenly.
Once baked, let your muffins cool a few minutes before drizzling on a quick lemon glaze. You could skip it in the name of breakfast or health, but…why?
Life is short. Muffins are breakfast-appropriate cupcakes. This glaze is “secretly” an icing.

Serve your Lemon Poppy Seed Muffins up with coffee or tea or whatever makes you happy. Good luck resisting a second. I’ve been known to eat three or four of these throughout the day, which seems like a lot, but can you blame me?
Lemon Poppy Seed Muffins
makes 12 muffins
3/4 cup granulated sugar
3 tablespoons lemon zest (about 2 medium lemons)
2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon Kosher or sea salt
3 tablespoons poppy seeds
1 cup whole milk, room temperature
1/4 cup fresh lemon juice (about 1 1/2 medium lemons)
1/2 cup neutral-flavored oil (I use canola)
2 large eggs, room temperature
1 teaspoon pure vanilla extract
Glaze:
1 cup confectioners sugar
2 tablespoons fresh lemon juice (about 1/2-1 medium lemon)
Preheat oven to 400F.
Line a 12-cup standard muffin pan with cupcake liners. Set aside.
In a medium mixing bowl, use your fingertips to rub lemon zest into sugar. Whisk in flour, baking powder, baking soda, salt, and poppy seeds.
In a small-medium mixing bowl (or large measuring cup), whisk together milk, lemon juice, oil, eggs, and vanilla. Add wet ingredients to dry and stir with a silicone spatula or wooden spoon just until combined—no more than 15-20 strokes.
Divide batter among muffin cups—they will be full. Carefully tap the pan on the counter five times to release any large air bubbles. Bake for 5 minutes, then turn the oven temperature down to 350F and bake for an additional 14-16 minutes.
Meanwhile, place a cooling rack over a sheet of parchment or wax paper.
Remove muffins from the oven and let cool in the pan for at least five minutes before removing to prepared rack.
Make glaze. In a small bowl, use a fork to whisk together confectioners sugar and lemon juice until thick, but pourable. Pour or drizzle over muffins. Let sit 5-10 minutes before serving. Glaze will set completely after several hours.
Leftovers will keep covered at room temperature for up to three days. Unglazed muffins may be double-wrapped in plastic and frozen for up to 3 months.

With all the
I spent a good chunk of January working on a coconut cookie for the blog, but the recipe’s just not quite “there.” I was a little bummed after round 4, realizing that I was going to have to let the recipe come to me rather than forcing it (baking gets spiritual around these parts). In the meantime though, I had three bags of sweetened flaked coconut taking up space in my kitchen. I realize that bags of coconut don’t have souls, but I swear they were taunting me.



And so, I threw the contents of one in a bowl with a cup of sweetened condensed milk (a la
Easy Coconut Truffles are way better than any candy you’ll find in a heart-shaped box, and super fun to make at home. They require a grand total of six ingredients (!) and are chock-full of coconut flavor thanks to the creamy filling and toasty garnish. And even though they’re a little imperfect, they’re completely wonderful.



I am psyched for today’s recipe, y’all! This vegan Butternut Squash Chili is so good and good for you—perfect for the Super Bowl this weekend or any wintry night.
It’s made with loads of good stuff. We’re talking the standard onion, garlic and red bell pepper, of course, but also a whole butternut squash (duh), meaty mushrooms, and pinto beans. YUM!

Small amounts of cinnamon and cocoa powder set this chili apart from the rest. They add a little nuance to the standard seasoning combination of chili powder, cumin, dried oregano, and cayenne. Minced chipotles in adobo are stirred in before serving for a touch of smoky heat.

As with most soupy, stewy things, this is a meal that will get better with time. It’s delicious the day it’s made, but is particularly spectacular after a day or two in the refrigerator. Basically, if you want to eat this while you watch the Super Bowl, make if Friday, Saturday or Sunday. Love a make-ahead main!



When thinking up recipes for the week between Christmas and the New Year—a time when I have tons of leftovers, don’t want to take on any intense kitchen projects, and mostly just need a nap—I knew it had to be easy.
Eeeeeeeaaaaasy. E-A-S-Y. No chill, one bowl, no mixer, limited ingredients—easy!


That’s exactly what these Potato Chip Clusters are: golden, salty-sweet, lightly-candied morsels that require four ingredients, come together in five minutes and bake in seventeen.
They’re brown at the edges and crispy throughout, and stay that way for days. You won’t have to worry too much about softening since their primary structural component is a single egg white.
I envision these as the perfect thing to go alongside a cocktail, mocktail or glass of champagne on New Year’s Eve, but I also think they’d be great for Super Bowl Sunday, drizzled with chocolate and tucked into a cookie tin next Christmas, or whipped together any old time you need to knock out the last of a bag of potato chips.

Today’s recipe is hardly a recipe at all. When I was visiting my friend, Tad, in San Francisco last month, we stopped for an ice cream cone at
I decided then and there that I would figure out a Hot Butterscotch recipe by Thanksgiving, and lo and behold, here it is. Rocket science, this is not, but those Castro Fountain guys are on to something!

Simply whisk a cup of 
Hot Butterscotch is creamy and comforting with plenty of buttery brown sugar and vanilla flavor. I like it as written, but if you want something a little more decadent, feel free to swap half & half or heavy cream for some of the milk.
No matter how you mix it up, this is the perfect low-maintenance treat to make this Thanksgiving weekend. You could even give jars of homemade butterscotch as food gifts and attach a label with the recipe. But then again, I may be getting ahead of myself.
